Foodie Friday. I would like to share a recipe that is a new twist on an old favorite--watermelon. We always think of watermelon as a sweet, dessert-type fruit, but this recipe turns it into a salad along the lines of tossed, or pasta salads. It is easy and delicious and just in time for the
4th of July celebrations. It would be a good one to take to a picnic or pot luck dinner.
Watermelon Salad4 cups (1/2" cubes) seedless watermelon
1 cup chopped cucumber
1 cup finely chopped kalamata olives
1 (1/2-ounce package fresh basil, torn (or fresh from your garden if you planted it)
2 tablespoons fresh lime juice
1 tablespoon fresh lemon juice
1 tablespoon minced shallot
1/2 teaspoon salt
1/4 teaspoon ground black pepper
1/4 cup extra-light olive oil
In a large bowl, combine watermelon, cucumber, olives, and torn basil.
In a small bowl combine lime juice, lemon juice, shallot, salt, and pepper, let stand for 5 minutes. Slowly whisk in olive oil until combined. Pour over watermelon mixture and toss gently to coat. Cover and chill at least 2 hours or overnight to let the flavors marinate.
Let me know what you think of this recipe.

I've not made watermelon salad although I do love watermelon. This might have to be on my to try list for the 4th
You are definitely in the Fourth of July festive mode. I love your blog and will come back and visit often. The watermelon salad looks delish and one I think I need to try as well. Thanks for posting the recipe.
Thank you also for visiting my blog.

Well, now you know I had to come visit the gal who also switched from Miracle Whip to mayo in her potato salad and I'm glad I did!
My sister was out last weekend and came home with 4, yes FOUR watermelons. Now, you need to know that there is only the two of us here and as much as I love watermelon, four are a little much. She got them for $1 a piece, but still…four?
Now you have come to my rescue with a recipe I will definitely be making in the next few days. Thanks!
BTW, I also use one egg for each potato, but then I boil another one for every six eggs to use for garnish. We both know you can never have too many eggs in potato salad!
What a unique way to use a favorite of mine. Love watermelon. Thanks for the recipe.

I have made watermelon salad in the past and will try your recipe next. I like any type of watermelon in the summer as I find it so refreshing. Thanks for sharing.
Love watermelon salads! I would not have thought of the olives, but that sounds yummy. I add feta to mine on occasion. Thanks for stopping by. I hope you will come again soon. I'm not a Miracle Whip person either:)
Thanks for stopping by and commenting on my garden tea. I like what you called the boxes ( mystery boxes) I had a picture of what was in them. It was the luncheon set for the tea. My computer wouldn't let me list the last pic, and repeated the box pic. TTFN
Another interesting recipe to use all this watermelon we have around here right now! Looks delicious!
I make a salad similar to this (minus the cucumbers) and love it. Definitely and unexpected mix of flavors but somehow addictive! Thanks for stopping by my blog.
Oh, that looks lovely and light and refreshing Jean!
Sounds wonderful mom! I heard you came by when we were at the store tonight. So sorry we missed you!
XOXO

Hello! Just popped over here from "we are THAT family" b/c I liked your screen name of honeysuckle.
My husband called our daughter a honeysuckle monkey when she was first born b/c she was always breastfeeding.
Anyway, I like all the variety on your blog, and I can see from your blog that you really love life and family like I do. God Bless!
